Marble Bar and Grill Erina
Freddie Falomone may not have known it as a kid, but his childhood was jam-packed with all of the ingredients needed to nurture the beginnings of a successful career as a passionate and skilled chef.
Growing up in the hustle and bustle of restaurants and wine bars run by his family in Rome, Freddie was constantly exposed to the rich smells, delightful aromas and satisfied smiles and tummy taps the European hospitality scene is world famous for.
“I was always in the kitchen, always helping out,” he reminisces. And if you’ve sampled his latest offering, you’d agree with us – that childhood was certainly not wasted.
In November Freddie and business partner, Daniel Stephenson opened Marble Bar & Grill on Karalta Road at Erina. The restaurant’s name is a nod to the incredible quality of beef on offer, where you’ll find cuts like a 300g Striploin MB4+; 500g Riverina Angus rib eye MB2+; the 1kg Fiorentina Jack’s Creek MB3+; or the mouth-watering cube roll Wagyu Shiro Kin with what we’re crowing the Coast’s most drool-worthy marble score of MB9+.
Moving to the Central Coast from Rome in 2012, Falomone quickly surrounded himself with the cream of the local crop when it comes to industry mentors. Under the wings of local hospitality royalty Scott and Ruth Macfadyen from Terrigal’s Arc, he cut his teeth learning how to adapt his home experiences to the Australian market.
Marble Bar & Grill’s claim is to “transform seasonal ingredients through open flame cooking,” and if you know the difference between fancying a steak and a fancy steak, then you have our word that you will not be disappointed.
“Our food is about quality over quantity,” Falomone explained to Coasties.
“I want to make sure everybody’s going to love my food, I want them to think about the service, how we pair the food and the wines, and the whole experience they can have.”
A crowd favourite for the crew at Coasties is the Wagyu meatballs served in a sensational dish of mushroom and chilli. When asked about the meal, Falomone said he didn’t plan on adding meatballs to the menu until his mother recently prepared her original family recipe for him. The flavour explosion made him realise it was a dish he needed to share with customers. Despite wanting to be known for the best steaks on the Coast, Falomone’s favourite dish is the gnocchi with burned butter and sage “just like we do it in Italy”, with roasted pumpkin, crispy prosciutto, almonds and pecorino foam.
When the dishes are this decadent, they call for quality wine and if you’re into your reds (or whites or tap beer or cocktails!) then you’ll enjoy the three pages of vino on offer. All staff have been proudly trained to perfectly pair meals with sips, and it’s clear they’re all as passionate about the little details as you will be about coming back once you’ve had your first visit.
