A tonne of marshmallow every month. That’s the volume The Marshmallow Co. in Wyong currently work at.
To put it into perspective, they’ve handmade and hand-cut a staggering 156 tonnes of their delightfully squidgy, flavoursome-packed marshmallow since opening in 2018.
That’s the equivalent of 52 elephants in marshmallow.
So, it’s perhaps no surprise they’ve recently outgrown their cute-but-compact space opposite Glee Coffee Roasters and have now upgraded to the main street of Wyong.
“We’ve now got so much space,” says owner Joel Twyman. “It’s amazing to think how the business has grown in just a few years. We feel really lucky.”
The Marshmallow Co. is the brainchild of Joel and his co-owner and wife Breah. It all started as a side hustle. They’d sell at markets on weekends and then in the week, it was back to their day jobs, with Breah working as a beautician and Joel in software management.
The side hustle dream didn’t quite go to plan though. It wasn’t long before they needed a full-time space to create the sweet stuff for both locals and their ever-growing stockists around Australia.
They even opened up a dessert bar for a period of time which was hugely successful. However, due to the pesky pandemic and their online orders growing (as well as the addition of 2 small humans), Joel and Breah made the tough decision to press pause on the dessert bar in Feb 2022. The space is still open for click and collect orders and the team hope to reopen the dessert bar in the near future.
We’ll be waiting eagerly for the reopening and be sure to drop the news as soon as it happens. In the interim, we’ll reminisce over the sweet jaffles oozing with Nutella and, yep, piping hot marshmallows. The marshmallow-filled tacos, marshmallow-rimmed smoothies, bananas splits, s’mores, churro and sundaes.
For Breah, the move to a larger space came just at the right time. The duo and their tight team are in the kitchen almost every day of the week, making batch after batch. to keep up with stockists and online orders.
