Summer may have sailed, but Coasties can still hook into a fresh plate of seafood with a mouth-watering cocktail next to stunning, waterfront views this winter.

The transformed restaurant space is ready to welcome new and loyal customers in to indulge in a scrumptious, seasonal menu loaded with carefully selected quality produce sourced from local suppliers.

Venue Coordinator Jess Stuart and Executive Chef Chris, who are in fact cousins, are The Bistro’s leading culinary creatives proving themselves more than their rookie status might suggest.
“We hired chefs in-house in September last year. We kicked it off with a small menu and did a six-month trial. It went great,” Jess told Coasties.
“Chris has run very successful businesses in Sydney, but he had never worked in a scenario like this before. I’ve worked in hospitality for 12 years, but I’ve never had a position like this. Prassi, the head chef, is our Nepalese star. We work in conjunction every day, which is what you need to function well.”
“We’re getting phenomenal feedback. You can’t please everyone, but from what we’re hearing, we’re doing well, and we only want to continue going up.”

Even throughout the pandemic, the club has remained an iconic, community-driven institution that offers peaceful privacy along the tranquil harbour of Brisbane Water.

It is the first time in 10 years that the Board decided to operate the restaurant independently with a hand-picked team of professionals.
Using Chris’s extensive industry experience and knowledge, the pair have crafted a menu together that honours pub classics while introducing unique flavour combinations.

They have executed a simple yet generous menu that serves a diverse range of seafood dishes, salads, burgers, and even tacos to suit all taste buds and dietary needs.
“People will have a lot more choices. The chefs have been very adamant about more ‘complete’ meals, than just a standard pub feed. We want there to be a dish for everyone,” Jess said.

“The chefs spend about three hours of prep time every day and sometimes come in on Monday morning to prepare a couple of things. They’re also very conscious about wait times and want to make sure each dish is consistent. They’re perfectionists.”

After looking at their current menu, it is clear to see the level of passion that is invested into each meal.
For entrée, dive into a plate of pan-fried king prawns cooked in melted butter and chilli alongside a crisp green leaf salad tossed in a tangy vinaigrette.
Move on to the crispy skin barramundi with an infused lemon butter sauce or a classic serve of beer battered fish and chips delivered fresh from the market that day.
“We’ve had good feedback on our seafood, which is sourced locally from Shane’s Seafood,” Jess said.
“We don’t get it delivered until two o’clock in the afternoon because they go out, catch it, and bring it in fresh.”

If you’re after a heartier option, choose the southern fried chicken burger assembled with a dollop of sharp blue cheese sauce made in-house.
Top it off with a fan favourite Turkish Delight cocktail or a mojito jug to share with mates.

If this all sounds great, keep your eyes peeled for more tasty options in the upcoming menu, including some seafood specials going on permanently.
“We are expanding the menu and there will be some changes for the colder months. We didn’t want to give our loyal members too much of a shock, so we’re gradually introducing it,” Jess said.
“Chris brought a lot of his own recipes with him. Every sauce is made in-house every morning, including the cashew cream with cauliflower steak and the blue cheese sauce.”

The revamped bistro caters for small, intimate bookings to larger functions of up to 120 people with private and semi-private areas available.
